Egg Bhurji

Egg Bhurji is an indian dish made with scrambled eggs, onions, tomatoes, green chilies, and other indian spices. It usually serves as a brunch, lunch, or dinner with naan, roti, or bread. Its easy to make, healthy, and delicious.

Ingredients
  

  • 4 Boiled eggs
  • 2 eggs
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup green peas
  • 3/4 cup Finely chopped onion
  • 1/2 cup finely chopped tomatoes or 1/4 cup tomato sauce
  • 1 tbsp chopped green chiles
  • 1 tsp garlic
  • 1 tsp ginger
  • 1 tsp kasoori methi
  • 1 tbsp butter paneer or butter chicken or egg masala i use MDH brand masala, and it's easily available at any indian supermarket
  • 1 tsp garam masala
  • 1 tbsp red chili powder
  • 1 tsp black pepper
  • salt to taste
  • chopped cilantro for garnishing

Instructions
 

  • first boiled 4 eggs, and then grate them and keep it aside. Also, crack 2 eggs in a bowl, whisk them with half a cup of water and keep aside.
  • Heat oil and butter in a large pan. once butter is melted add onions, garlic, ginger, and green chilies. Sauté everything for about 3 to 4 minutes or till onions become light golden brown.
  • Add tomatoes or tomato sauce, green peas, all the spices, kasoori methi, and salt. cook everything for about 2 to 3 minutes.
  • Add grated eggs, and the eggs and water mixture. cook everything for about 3 to 4 minutes. Keep stirring continuously until cooked. Switch off the heat.
  • Garnish with cilantro and serve with naan, bread, or roti.

Notes

1. Adjust green chilies and red chili powder according to your spice level.
2. You can always use more butter for rich flavors.
