Chicken Masala Rice

The Chicken Masala Bhat (rice) recipe is simple and delicious. This chicken masala rice will taste like Biryani but it's much less work and more healthy then Biryani. It's a great wholesome weekday dinner option. I am using Shan Biryani Masala, along with fresh mint and some pantry spices.

Ingredients
  

  • 1 LB Boneless skinless chicken cut into medium pieces
  • 3 cups cooked rice
  • 1 cup Chopped onions
  • 1/2 cup chopped Tomatoes
  • 1/2 cup green peas
  • 1 tbsp Minced garlic
  • 1 tbsp ginger paste
  • 2 chopped green chilies
  • 1/4 cup chopped mint
  • 1/4 cup chopped cilantro
  • 6 tbsp oil
  • 1 tbsp cumin seeds
  • 1 packet Shan Bombay Biryani masala
  • 1 tsp Turmeric
  • 1 tbsp red chili powder
  • 2 tbsp roasted cashews

Instructions
 

  • Heat oil in a pan on a medium low. Once it's hot add cumin seeds, and then add ginger, garlic, green chilies, and chopped onions. Saute everything for about 4 to 5 minutes.
  • Now add Chicken and mix well. Let Chicken cook on a medium to high heat uncovered. Now add shan chicken biryani masala, turmeric, red chili powder, and salt to taste. Keep cooking until chicken is tender. Make sure there is no liquid, and your chicken is dry and oil starts to separate.
  • Now at this point add chopped tomatoes, green peas, mint, and cilantro. mix it well and cook everything for about 2 minutes.
  • Add your cooked rice along with cashews in the chicken. Once everything is mixed well then trun off the stove. Serve this delicious rice with your favorite raita( yogurt), sliced cucumbers, and onions.

Notes

1. I usually make this from leftover rice.
2. Don’t add too much salt since shan biryani masala already has salt.
3.You can enjoy this rice for about 3 days. keep it in the refrigerator and before you reheat the rice add some water.
4. Adjust green chilies and red chili powder according to your spice level.
