Cashew chicken is a combination of chicken, cashew, and either a light brown garlic sauce or a thick sauce made with soy sauce and other Asian spices. This is my family’s favorite version of cashew chicken. It’s a perfect easy to make quick lunch or dinner.

INGREDIENTS :

  • 2 cups or about 1/2 LB boneless and skinless chicken cut into small cubs
  • 1 cup chopped bell peppers
  • 1 cup roasted unsalted cashews
  • 3 Tbsp oil
  • 1 Tsp sesame oil
  • 3 Tbsp soy sauce
  • 2 Tbsp spicy ginger teriyaki sauce
  • 1 Tbsp sriracha sauce
  • 1 Tbsp honey
  • 1 Tbsp minced ginger
  • 1 Tbsp minced garlic
  • 1 Tsp black pepper
  • make a slurry of 1 Tbsp cornstarch and 3 Tbsp water
  • some chopped Thai chilis (optional)
  • salt to taste

 

 

 

 

STEPS TO FOLLOW :

Step 1: First, in a small bowl mix honey, soy sauce, teriyaki sauce, sesame oil, and black pepper, and keep it aside. Now heat 2 Tbsp oil in a skillet and cook chicken. It will take about 5 minutes. Make sure not to put the lid on the skillet. Cook chicken on high heat with an open skillet. Once the chicken is almost cooked add ginger, garlic, and bell peppers.

Step 2: Now add mixed sauce and cashews, mix well, and cook for about 2 minutes. Now add corn starch slurry, and mix everything well. If needed, you can add a little water or chicken stock. Cook for about a minute and then turn off the stove. Garnish with sesame seeds and green onions. Serve it hot with your favorite rice.
