Thai style sweet and spicy pineapple and cashew fried rice is a quick weekday or weekend dinner. It’s easy to make and so much better then take-outs.

INGREDIENTS :

  • 3 cups cooked rice
  • 2 Tbsp sesame oil or any oil
  • 1 cup fresh pineapple
  • 1/2 cup cashews
  • 1/4 cup green peas
  • 1/4 cup carrots
  • 1/4 cup red bell pepper
  • 1/4 cup finely chopped onions
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 4 Tbsp soy sauce
  • 2 Tbsp chili paste
  • 1/2 Tbsp black pepper
  • salt to taste

 

 

 

STEPS TO FOLLOW :

Step 1: First, heat oil and then add ginger, garlic, and onions, Sauté for a minute. Now add your vegetables, cashews, and pineapple, mix well and let it cook on high heat for about 3 minutes. Now add rice, soy sauce, chili paste, salt, and pepper. Mix everything well and let it cook for about 1 minute. Try your rice if you need to add more spices. Serve it hot and enjoy this delicious fried rice.
