Hearty, healthy, and delicious vegetarian chili packed with good for you ingredients. A perfect and easy dish to make for meatless Mondays. I have added quinoa for some protein.

INGREDIENTS :

  • One 150z can sweet corn
  • One 15oz can red kidney beans
  • One 15oz can tomato sauce
  • One 10oz can diced tomatoes
  • 1/4 cup quinoa
  • 1/2 cup chopped 1celery
  • 1 cup chopped zucchini
  • 1/2 cup finely chopped onions
  • 2 Tbsp finely chopped garlic
  • 1 Tbsp Italian seasoning
  • 1 Tbsp oregano
  • Salt and pepper to taste
  • Some red chili flakes
  • 2 Tbsp olive oil

STEPS TO FOLLOW :

Step 1: Turn on your instant pot on a saute mode and then add oil. Then add garlic and onions, mix it well. Now add all the vegetables, beans, and corn. Saute for about 2 to 3 minutes. Now add Tomato sauce, diced tomatoes, and all the dry spices with 3 cups of water and mix everything well. Now turn on your instant pot on manual and cook for 12 minutes.

Step 2 : Once its ready serve it in a bowl and topped off with some fresh parsley or cilantro. You can also add some Parmesan cheese. Enjoy this delicious meatless chili with a grilled cheese sandwich.

 

 

 

Tips:

1. If you don’t have the instant pot, you can follow the same step for the Pressure cooker.
2. You can also make chili in a pot on a stove top, Only thing it will take a longer time to cook.
3. If you don’t have the canned ingredients, you can replace them with fresh ingredients.
4. I used celery and zucchini, but you can also use broccoli, carrots, sweet potatoes, or green beans.
