An enchilada is a corn or flour tortilla rolled around a filling and covered with a savory sauce. Enchiladas can be filled with vegetables, beans, meat, cheese, or combinations. I made a small twist by adding tofu for some extra protein for vegetarians.

INGREDIENTS :
- 1 cup crumble firm tofu
- 1 cup chopped spinach
- 1 cup canned or fresh sweet corn
- 1 cup refried beans
- 1/2 cup canned or fresh tomatoes
- 1/2 cup chopped onions
- 3 Tbsp taco seasoning
- 3 Tbsp oil
- 1 Tbsp jalapeños
- salt to taste
- flour tortillas
- 3 cups shredded Monterey jack and cheddar cheese
- 2 can store-bought enchiladas sauce
STEPS TO FOLLOW :
Step 1: Heat oil in a pan and add chopped onions. Sauté for a minute and then add tomatoes, taco seasoning, all the vegetables, and tofu. cook it for about 1 minute and now add refried beans, mix well and then turn off the stove.
Step 2: Now, in a pan with little bit oil cook tortilla for about 20 to 30 seconds on each side. Once they are ready, keep it aside.
Step 3: Now grease the oven-safe tray and pour some enchilada sauce. Now take a tortilla filled with some cheese and tofu filling. Roll it up and put it in the dish. Once you are done with all tortilla, cover all of them with enchiladas sauce and some cheese. Bake it in the oven for about 15 minutes till you see the cheese is melted. Let it stand for 5 minutes then serve it hot with your favorite salsa, guacamole, and sour cream.
Tips:
- You can also melt the cheese in the microwave on a high setting for about 6 minutes.
- You can also add some shredded mozzarella cheese.
- Add some red chili powder in enchilada sauce.
- You can also add ground chicken instead of tofu.
- There is really no measurement for this recipe—the key thing to use the right ingredients.
- Sometimes I buy my enchiladas sauce from local Mexican restaurants. It really comes out delicious with that authentic sauce.
