Sprouted Moong and Quinoa Pulao

Pulao is a very famous Indian dish made with rice, vegetables, and spices. Here I am using quinoa and sprouted moong instead of rice. This dish is delicious and healthy to have for lunch and dinner. Usually, we like to have this pulao on Monday for dinner.

Ingredients
  

  • 1/2 cup Moong Sprouts
  • 1/2 cup Quinoa
  • 2 tbsp olive oil
  • 1/4 cup diced onions
  • 1/4 cup Chopped cauliflower
  • 2 tbsp green peas
  • 2 tbsp chopped red bell pepper
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tsp chopped green chilies
  • 1 tbsp red chili powder
  • 1/2 tsp Turmeric powder
  • 1 tsp garam masala
  • salt to taste

Instructions
 

  • First turn on your instant pot on a sauté mode and then add oil. Once oil is hot add garlic, ginger, and onions. Sauté for about a minute. Now add all the vegetables and dry spices and salt. Mix well and saute for a minute.
  • Now add quinoa and sprouts moong and 1 cup water. Mix everything well. Now close the lid,turn off your instant pot from sauteing mode, and turn on manual for 5 minutes.
  • Once its ready serve it hot with raita, sliced onions and cucumbers.

Notes

You can use a pressure cooker instead of an Instant Pot.
Adjust green chilies and red chili powder according to your spice level.
