Spinach lasagna roll-ups are individual vegetarian lasagna filled with spinach and cheese. Its a perfect weekend or weeknight meal. This is the best way your kids will eat veggies and no one will miss the meat.

INGREDIENTS :

  • 1 pack lasagna
  • 1 jar marinara sauce
  • 3 cup ricotta cheese
  • 2 cup mozzarella cheese
  • 1 cup parmigiana cheese
  • 2 cups chopped fresh spinach
  • 1 egg
  • 1 Tbsp minced garlic
  • 1 Tbsp red crushed pepper
  • 1 Tbsp Italian seasoning
  • basil for garnishing
  • salt and pepper to taste

STEPS TO FOLLOW :

Step 1: First, cook the lasagna pasta as per package instruction. Now in a large bowl mix ricotta cheese, 1 and a half cup mozzarella cheese, 1/2 cup parmigiana cheese, chopped spinach, egg, and all the spices. Spread spoonful cheesy mixture on each lasagna sheet and roll them. Now on a baking pan add some marinara sauce and then arrange all the rolled lasagna on it. Keep some space in between each lasagna.

Step 2: Now add spoonful marinara sauce on each lasagna along with some mozzarella and parmigiana cheese. Bake it on 350F for 25 minutes. Once it’s ready, add some chopped basil and serve it hot.
