This vegetarian protein pack dish is very famous in the state of Gujarat in India. Delicious and nourishing Gujarati mung is made with ginger, garlic, and other spices Usually, we eat this for lunch or dinner with roti or rice. It’s a perfect soul food on Monday, after eating weekend cheat meals.

INGREDIENTS :

  • 1/3 cup mung beans
  • 1/3 cup black eyed-beans
  • 1 Tbsp ginger garlic
  • Green chilies optional
  • A couple of curry leaves
  • 2 dry red chili’s
  • Small cinnamon stick
  • 4 cloves
  • 1 Tbsp Ajwain(carom) seeds
  • 2 Tbsp oil
  • 1 Tbsp red chili powder
  • 1 Tsp garam masala
  • 1 Tbsp jaggery
  • 1 Tbsp tamarind powder
  • 1/2 Tsp turmeric powder
  • 1 Tsp coriander-cumin powder
  • Salt to taste

 

STEPS TO FOLLOW :

Step 1: First, soak both the beans in the water for 30 minutes. You can also soak them overnight or for a couple of hours.

Step 2: Turn your instant pot on saute mode and add oil. Once the oil is hot, add ginger, garlic, curry leaves, and Ajwain, Saute it for 30 seconds. Now add all the dry spices, beans, salt, jaggery, and tamarind powder. After all spices and beans are well mixed, add 3 cups of water. Close the lead and put your instant pot on a pressure cook mode for 10 minutes.

Step 3: After 10 minutes, let your instant pot cool down. After that open the lid, and put your instant pot on saute mode again. Then make a slurry with 1 Tbsp besan (gram flour) and 4 Tbsp water, mix that in the beans and cook it for 2 minutes.

Step 4: Now, take the beans in the serving bowl and prepared Tadka (tempering) as follows:
Take 2 tbsp oil and add red chili, cinnamon, cloves, and some red chili powder and heat it.

Step 5: Pour this Tadka over mung and black-eyed beans. Serve it with your favorite Roti or Rice.

Tips :

1. If you don’t have an instant pot you can use a regular pressure cooker instead.
2. If you don’t have tamarind powder then you can use dry mango powder, tamarind paste or lemon juice.
