Khichadi is a dish from the Indian subcontinent made from rice and lentils. In Indian culture, it is considered one of the first solid foods that babies can eat. I gave a small twist on regular Khichadi by adding oats instead of rice. It’s delicious and Healthy!!

INGREDIENTS :

  • 1 cup rolled oats
  • 1 cup yellow moong dal
  • 1/2 cup chopped onions
  • 2 cups mix vegetables
  • 2 Tbsp ginger garlic paste
  • Green chilies optional
  • 4 Tbsp ghee (clarified Butter)
  • 2 Tbsp Peanuts
  • 1 Tsp cumin
  • 4 clove
  • Small cinnamon stick
  • 2 to 3 red dry red chili’s
  • 1 Tbsp dry red chili powder
  • 1 Tbsp garam masala
  • 1/2 Tsp turmeric powder
  • Salt to taste

STEPS TO FOLLOW :

Step 1: First, wash your dal and keep it aside. Now turn on your instant pot on a saute mode. Add Ghee, once Ghee is melted, add cumin, red chilies, clove,cinnamon stick, and peanuts. Then add ginger garlic paste and onions. Mix it well and cook it for 2 to 3 minutes.

Step 2: Now add vegetables and all dry spices, mix it well.Then add yellow dal and oats with 2 to 3 cups of water. Adjust your water depending on which consistency you want. Now close the lid and turn on your instant pot on rice mode.

Step 3: Once it’s ready, serve this delicious khichadi with your favorite Indian pickles, raita or plain yogurt.

 

Tips:

1. You can use any dal you like.
2. use the same recipe for pressure cooker instant of instant pot, just adjust water accordingly.
3. I used zucchini, cauliflower, and carrots, but you can use any veggies you like.
4. This is a delicious and very healthy, wholesome meal. You can have it for breakfast, lunch, or dinner.
