Hot Italian Turkey Stuffed Peppers

Ingredients
  

  • 1 lb Ground Turkey
  • 3/4 cup cooked quinoa
  • 1 cup Finely Chopped Onion
  • 1/2 cup Canned or fresh chopped tomatoes
  • 4 Bell peppers
  • 4 tbsp olive oil
  • 1 tbsp chopped jalapeños
  • 1 tbsp Minced garlic
  • 2 tbsp italian seasoning
  • 1 tbsp Oregano
  • 1 tbsp red crushed peppers
  • 1/2 tbsp black peppers
  • 1 cup Mozzarella cheese
  • 1/4 cup Parmigiana cheese
  • salt to taste

Instructions
 

  • Heat the oil in a skillet and saute the onions, and garlic over medium-high for 2 minutes.
  • Add tomatoes and all the dried spices, and cook for another 5 to 7 minutes.
  • Add ground turkey and cook till turkey is almost cooked. Add quinoa and mix everything well. Trun off the stove and let the mixture cool.
  • While the stuffing is cooling down, rinse the peppers, cut them in half, and remove seeds.
  • Once the mixture is cooled down add 1/2 cup mozzarella cheese and 1/4 cup parmigiana cheese.
  • Stuff the bell peppers with turkey stuffing topped with mozzarella cheese. Bake it covered in the oven at 350° for 25 to 30 minutes.
  • Serve it with your favorite Italian sauce. I am serving it with creamy pesto sauce.
