Southwest veggies quesadillas are loaded with beans, corn, bell pepper, cheese, and spices. This dish is perfect for a quick weeknight dinner or weekend lunch. You can also add chicken if you like.

INGREDIENTS :

  • 2 cups canned black beans
  • 1 cup canned or frozen corn
  • 1 cup chopped bell pepper
  • 1 cup chopped onions
  • 1/4 cup chopped cilantro
  • 2 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 2 Tbsp taco seasoning
  • 1 Tbsp red chili powder
  • 1 Tbsp cumin powder
  • wheat or flour tortillas
  • 3 cup shredded mozzarella and Mexican cheese.
  • salt to taste

 

 

 

STEPS TO FOLLOW :

Step 1: Heat the oil in a skillet over medium heat. Once its hot add garlic and onions and cook for about 2 minutes. Now add the beans, corn, bell pepper, cilantro, and all the spices. Saute this mixture for about 3 to 4 minutes.

Step 2: Now in a skillet over medium heat, add some olive oil or butter and then place the tortilla. First, add some cheese and then cooked veggies mixture and some more cheese over it. Fold the tortillas and cook it on both sides till golden brown and till the cheese starts to melt. Cut the quesadilla and serve it hot with your favorite salsa and guacamole.
