Gujarati Kadhi
Gujarati kadhi is a Gujarati version of kadhi. It is a very popular Gujarati dish made of buttermilk or dahi(yogurt) and gram flour. Kadhi is an essential part of Gujarati cuisine. Kadhi tastes delicious with khichdi, rice, and paratha.
Ingredients
- 1 cup plain yogurt
- 2 tbsp sour cream
- 1 tbsp besan (gram flour)
- 11/2 cup water
- 1/2 tbsp chopped green chilies
- 1 tsp grated ginger
- 1 tbsp brown sugar or regular sugar
- 2 tbsp ghee
- 2 curry leaves
- 6 cloves
- 1/2 stick cinnamon
- 3 red chili’s
- 1 tsp cumin seeds
- 1 tsp Methi(fenugreek) seeds
- 1 tsp hing
- cilantro
- salt to taste
Instructions
- First in a bowl mix yogurt, sour cream, besan, and water. I use a whisk to mix everything. Now add sugar, salt, green chilies, and ginger. Now keep this yogurt mixture on the side.
- In a nonstick pot heat ghee, then carefully add cumin, methi, dry red chilies, curry leaves, hing, cinnamon, and clove. Now add the yogurt mixture and keep stirring on low medium heat. it will take about 5 minutes. Once it starts boiling turn off the heat and garnish with cilantro. Serve it hot with your favorite Gujarati food.
Notes
- If you don’t have sour cream then add more yogurt.
- you can keep kadhi in the refrigerator for 4 to 5 days.
- you can add or subtract green chilies according to your spicy level.
- Make sure to keep stirring kadhi while it’s cooking.
